Heart Healthy Vegetable Soup Recipe

Vegetable Soup

This soup is heart healthy since it contains fiber rich vegetables, legumes and beans.

Ingredients:

  • 1 red onion (diced)
  • 1 container of organic fresh baby portobello mushrooms (sliced)
  • 2 cups of diced organic carrots, 2 cups of organic chopped celery
  • 2 cups of white navy beans (cooked )
  • 1 cup of lentils
  • 2 chopped golden potatoes
  • 2 cloves of fresh garlic
  • 2 cups of spinach or baby kale
  • 6 cups of vegetable broth (no oil, no added sugars)
  •  Fresh parsley
Cooking Instructions:
  • Saute onions, minced garlic, carrots and celery with a little bit of the vegetable broth, then add the rest of the required ingredients listed in the recipe, except the spinach and parsley. Slowly add the rest of the vegetable broth and let it cook for about 30 to 35 minutes. Take off the stove and then add the spinach and parsley.
